Breakfast has always been my favorite meal and my new life’s work is to get Chase to love it with the same passion. (My husband is a lost cause: he’s been eating Honey Nut Cheerios with 2% milk every day since I met him 12 years ago..but I digress.) Consequently, I’m always on the hunt for breakfast recipes he’ll like so
I can convert him to the dark side he won’t get bored eating the same thing every morning.
Enter these Strawberry Shortcake Muffins from Dashing Dish.
If they were in a beauty pageant, they’d have a lot of attributes to sell the judges on: they’re healthy, delicious, easy to make, gorgeous-looking, low-cost and they’re actively trying to solve the problem of world hunger. They’d totally have the girl that decided to juggle as her talent beat. Instead of sugar or stevia like the recipe suggests, I used 1/2 cup of agave nectar and bumped the cooking time up by a few minutes to make sure they firmed up with the added liquid. Chase absolutely devoured them the past two mornings and I may or may not have done the same. They’re not super sweet, but the taste is so similar to a strawberry shortcake biscuit, especially with a little butter spread on top. Prep time for these was about 10 minutes and overall time is about 30-35.
