Recipe Round-Up For Family Friendly Meals

I am seeking a somewhat different form for this “Recipe Roundup”, as it looks like most of you prefer mainly dinner recipes (and that is where I have the most diversity in our meal preparation anyway.)

All of the following are recipes that we have personally produced and eaten in the last couple of weeks, so I can confidently promise for their low-cost ingredients, ease in preparing and taste. If you have a wonderful recipe you’d like to see featured in the roundup, please don’t hesitate to contact me!

Recipe Round-Up To Get You Through The Day

Breakfast

  1. Banana “Pancakes”: These do take 5 minutes. I do not even bother using the blender: just mash them up with a fork, and you are ready to go. A great substitute if you are craving pancakes, but you do not want all the carbohydrates.
  2. Zucchini Apple Muffins: I have made a few batches of them at the start of the week for children to eat at breakfast. They absolutely love them, and they are full of great things with no refined sugar.

Recipe Round-Up: Lunch

  1. Thai Peanut Chicken Salad: One of my new favorites. So yummy and makes enough to get a complete week’s worth of lunches for a single person.
  2. Healthy Homemade Chicken Salad: This one is my recipe, and it is super simple to make. Great as a sandwich or over greens just like I did.

 

Recipe Round-Up: Dinner

  1. Parmesan Zucchini + Corn: As I have mentioned earlier, I find difficulty with side dishes, but this was my go-to side recently. It takes so little time to create, and it is really delicious. Makes typically enough for us to have it two nights.
  2. Creamy Tomato Basil Soup: Very low price and vegetarian. Ideal for a meatless meal if you are trying to decrease your grocery bill. Goes great with a grilled cheese or panini. Made using Greek yogurt, so the “creamyā€¯ part is not super calorie-laden. Check here for more soups.
  3. Crispy Dijon Smashed Potatoes: This is a new favorite in our home. We had these this week with rotisserie chicken and a salad. The dijon sauce would also create a killer marinade for chicken, which I intend to try ASAP.
  4. Cheesy Chicken & Wild Rice Casserole: This recipe makes a ton and tastes as it’s all of the creamy deliciousness of cream of chicken or mushroom soup without any of the canned stuff. My son absolutely devours this material, and we love it as well. I have also made it vegetarian before by nixing the meat and bulking up the veggies.
  5. Southwestern Sweet Potatoes: Astonishingly satisfying, low cost and incredibly simple to make. Also vegetarian!
